in answer to the original question, I can only share my own experience which is that, owning both a saltarelle and a castagniari, both appeal to me from time to time.  That is to say, after a month or two of playing one, the other seems suddenly more attractive.  So if you're as fickle as I am, aim for one of each.  When it comes to playing  in sessions or elsewhere, I usually leave both at home, and take a Hohner along, because it's louder (I don't advocate deafening people, but you can play lightly on a Hohner and still cut through a racket of guitars and drums).

Quick correction re thirds stop on Castagnaris, these are optional extras, they appear to be standard on my stock because I always order boxes with the stop fitted, this is sometimes why my prices are a little higher .

Yes, I know Pete, but my point was that there are also thirds stops/registers fitted as standard on many Castganaris, e.g. Mory, Handry, 1914, Trilly, Mas, Rik, plus some of the older models, no longer made, e.g. the Lilium, Cortina, etc. Sorry if I didn't explain it well enough.
